How can you go wrong with cheese cake and cream cheese? It’s the perfect solution to any craving. If you’ve got a super sweet craving without busting the bank or spending too much time baking, this recipe is a big YES for you! Ingredients:

Filling:

  • 8 oz cream cheese
  • 5 tablespoons of stevia (or sweetener of choice)
  • 1 egg
  • 1 /4 teaspoon vanilla extract
  • Few drops of lemon juice
  • Pinch of salt
  • Strawberry or fruit of choice

Crust:

  • 1 cup almond flour
  • 4 tablespoons butter

Directions: 1: Preheat oven to 325°F. Continue by preparing a baking pan with liners of your choice. 2: Combine the crust ingredients first, until crumbly and well mixed. Proceed by pressing in about 1 tps of the crust into the liners and then bake for roughly 10 minutes. 3: Now it’s time to start the filling; beat the cream cheese until smooth. Add the extract, lemon juice and egg. Mix well. Add sweetener and salt. 4: Last step is to scoop the mixture into the mini crusts and bake for another 20 minutes or until the tops are a bit wobbly.
