Keto Pumpkin Pie Fat Bombs

If you are living the Keto lifestyle, you know all too well that treating yourself to something sweet and decodent is not allowed if you are doing true keto. But, thankfully we Keto goers can indulge in a sweet treat, that is 100% okay to swallow down a couple a day. Why? Because these are Keto Pumpkin Pie Fat Bombs. You will see that not only are these fat bombs delicious, they are also very easy to recreate in your very own kitchen and the best thing is, you don’t need fancy gadgets or ingredients to end up with results that will leave you feeling satisfied. So, are you ready? Good, because here we go.

To make these delicious Keto Pumpkin Pie Fat Bombs you will need:

    • 1/2 cup pumpkin puree
    • 2 oz. coconut butter (or you can use regular butter if you don’t have coconut butter on hand)
    • 1/2 cup coconut oil
    • 1/4 cup erythritol (or sweetener of choice)
    • 2 tsp pumpkin pie spice 
  • 1/2 cup pecans

1 Ice Cube tray preferably silicone, but you can use what you got on hand.

**Optional** You can add 1-2 Whole pecans in the center of each fat bomb to make it even more decadent.

Now, here is what you do. For me, I don’t bother heating anything up on the stove, it’s a lot easier to do everything in the microwave, but if you don’t have a microwave you can easily use a double boiler, pan or glass bowl over simmering hot water. Okay, so let’s get started. Take the pumpkin puree, coconut butter and coconut oil and place in a mixing bowl, then stir until combined in a microwave safe bowl or use your pan. Heat in micro for 1-1:30 minutes, or in a pan on very low heat until coconut oil, butter and puree are nicely melted. Once melted, stir in your sweetener and salt, pumpkin pie spice and mix well. Once you have all the ingredients combined, go ahead and grab your ice tray and place on a plate or small baking pan so the transfer from counter to freezer is less messy and a lot easier to carry over. Each cube hole measures around 1 tbsp, so grab a tbsp and scoop and pour until all mixture is gone. If you choose to add your pecans, do so while the mixture is still wet, and drop 1-2 pecans inside in each square. Grab your tray and place in freezer for about 30-45 minutes or until firm. Remove from freezer and enjoy eating 1-2 squares a day, but don’t over do it because fat bombs are exactly what they called, bombs of fat, BUT healthy fat.
